Gostol-Gopan d.o.o. has installed a new plant in the LIBERTATEA PANIFICATIE SA bakery in the Romanian capital.
The plant is designed for the automatic production of wheaten long loaves(between 200 and 700 g) with the capacity of 5.500 pcs./h in 3 shifts.
The dough mixing is performed on spiral mixers with removable bowl that assure a high mixing quality for different types of flour. The trolleys with bowl are automatically emptied with the help of a hydraulic tilting device into portioning hopper, which is position on the floor. A custom-made 6-pocket volumetric dough divider MARK makes sure the high production capacity is met, as well as the high dividing accuracy, which is ensured also by the tandem automatic check-weighers that both discard the default products, as well as regulate the dividing accuracy.
Due to the high production capacity, a tandem make-up plant is required with 2 parallel conical rounders and 2 parallel long moulders. Eventual double dough pieces are ejected after first proofing with the assistance of an automatic double-dough pieces discarding unit.
The long loaves are loaded into the final proofer through 2 loading devices. The final proofing takes place into a perfectly insulated chamber under totally controlled climatic conditions. In addition, it is possible to adjust the proofing time according to the product’s characteristics without affecting the production capacity of the plant.
The proofed products are gently deposited onto the outlet conveyor where a tandem scoring device decorates the loaves with cuts; their depth, number and inclination are fully adjustable.
The cyclothermic tunnel oven allows a fine adjustment of the baking diagram (upper and bottom temperature regulation on every 3 m segments) according to the specific product’s characteristics.
The plant is designed to fit the available space limitations, but at the same time assure a high output. The key feature of the plant is the automatisation, which makes sure high production outputs are met. The whole plant’s layout is subject to the high capacity: the tandem make-up plant, as well as all single plant’s components has been designed to meet the high production loads.
